The Cuban Bread Company will commercialize bread with a formulation that includes 20 percent corn flour over the next few months, in order to guarantee the levels of food production in the face of the deficit of inputs.
Daniel Cobas Cheda, director of the Cuban Bread Company, explained today at a press conference that the demand for the product has been growing, 2020 was even the year with the highest production, and in 2021 the plan is based on the real of the past period.
For the first four months of the year, 17,977 tons were planned and more than 23,000 have been obtained, which shows growth, although demand has not yet been met.
In order to guarantee the population the plan envisaged by the company, it was decided to extend the commercialization of productions with 20 percent corn flour, an experience that had already been carried out on a small scale, he stressed.
In May, taking into account the effects on wheat imports and the readjustment that was carried out to guarantee availability to prioritized destinations, the most expanded distribution of bread with corn flour was decided.
Thanks to that directive, there was no decrease in the plan and the product, although it changes its texture and its flavor a little, it maintains the necessary volume and quality, he stressed.
The Cuban Bread Company, taking into account the economic situation and looking for the availability of its productions, has been diversifying its products and incorporating extenders such as pumpkin and yucca, the savings obtained have been reversed in greater quantities, he said.
María de los Ángeles del Rey Batista, director of inspection for the National Office of State Inspection, explained that this body is placing emphasis on controlling the quality of bread with the new formulation.
It is recognized that it is not the same flavor, as it has slight variations, which appear mainly due to the granulation of the corn flour that causes changes in the crust.
However, the samples have been analyzed in laboratories and meet the necessary quality, although it is true that there are provinces where it has shown to be a bit acidic, the situations have been analyzed and pertinent measures have been taken, she said.
In the current month, 122 inspections have been carried out showing acceptance by the people, even so, the Cuban Bread Company is taking measures to ensure that the production is optimal and is working in order to find formulations that reduce the degree of granulation.
Corn flour must continue to be part of the productions of the Cuban bread chain depending on the availability of raw materials, the truth is that the extender provides food with nutritional added value and contributes to the country's food sovereignty, they said. managers. (Taken from ACN)
